An undersized hood or an over-long duct run leaves smoke in the dining room and heat in the kitchen. Hood dimensions, duct sizing and discharge position are calculated against the cooking line, not fitted to whatever ceiling void was left over.
Food-contact and splash zones need non-porous, cleanable surfaces with coved junctions and no open joints where residue collects. This is a specification decision at BOQ stage, not something a finishing contractor can retrofit.

A cafe in a shell with existing services is a different order of cost from a full-kitchen restaurant needing new exhaust, gas and drainage.
